1.5 oz Hiatus Tequila Blanco
1 oz Honey Ginger Syrup*
0.75 oz Lemon Juice
0.5 oz Cappelletti Sfumato Rabarbaro Amaro
Ice a shaker tin and add tequila, honey ginger syrup, lemon juice, and Sfumato. Shake for 10-15 seconds. Strain into a rocks glass with one big cube. Finish the drink by using an atomizer to spray a few squirts of scotch on top. Garnish with a lemon twist or a honeycomb candy.
*Honey Ginger Syrup (1:1): Heat equal parts of water and honey in a saucepan. Stir frequently until honey is dissolved. Grate 3 oz of fresh ginger per cup of water into the saucepan. Turn heat to low and stir frequently for 5 minutes. Take the pan off the heat and allow it to steep for 15-20 minutes. Strain out the ginger, label, date, and store in an airtight container in the fridge for up to 1 month.
